Ingredients: 4 x Marion Bay Free Range Chicken Breast Fillets; 1 1/4 teaspoons sea salt flakes divided; 2 tbsp olive oil; 150g baby spinach leaves; 1 medium shallot, finely chopped; ½ tsp dried sage; ½ tsp dried oregano; 1/4 tsp freshly ground black pepper; Pinch ground nutmeg; 2 cloves garlic, minced; 2/3 cup Feta cheese, crumbled; 2 tbsp walnuts, finely chopped; 1 tbsp grated Parmesan cheese; 2 tsbp unsalted butter; 1 lemon, cut into wedges, to serve
